It is served daily in The Secret or on the patio during the warmer months. Born in Serpa, in the heart of the Alentejo, Margarida Dias carries an instinctive relationship with food shaped by people, rhythms and human connection. Though she first studied psychology, this foundation refined her sensitivity to others, a quality that continues to define both her leadership and her cuisine.
Her path led her from a small petiscaria in the Algarve to the contrasting worlds of JNcQUOI and LOCO, confirming her preference for intimate kitchens where craft, calm focus and intention prevail. A period working with the MasterChef production team broadened her perspective on the restaurant universe, before she embraced a deeper exploration of sustainability at Bicho Mau, pushing boundaries in reuse, waste reduction and responsible sourcing.
As Executive Chef of Villa Dorothéa, Margarida has found a house that mirrors her culinary philosophy: thoughtful, seasonal, generous and human. Her cuisine is precise yet warm, grounded in exceptional produce and built on relationships with the people who grow, fish and craft it.
